Maple Syrup - The Rite of Spring

Spring is the time for the maple sap to flow. In our bush the Bouviers are involved in every step of the Maple Syrup production.

Our maples are on hilly terrain, so we use a gravity-flow, pipe-line system to take the sap from the tapped trees to the storage tank. While we string lines and tap trees the Bouviers are busy companions, never out of earshot while exploring every rock and cranny around. As complex as the network of lines becomes, the dogs move easily under, over and around them,- never disturbing the connections.

The gathered sap must then be boiled carefully for many hours to reduce it to syrup. Forty litres of sap will make only one litre of syrup.

During the long evaporation stage the Bouviers keep us amused with their games and antics.

Being ever watchful for good sticks, they help feed the hungry stoves used to heat the pans of syrup.

The best part of making Maple Syrup is in the tasting. Our Bouviers know that with fresh syrup comes Mom’s Blueberry Buckwheat Pancakes, and that there are always enough for everyone. Then there are the Bouv Biscuits, with just a taste of syrup,- crunchy and yummy, and very well earned.
