Maple Syrup - The Rite of Spring
Spring is the time for the maple sap to flow. In our bush the Bouviers are involved in every step of the Maple Syrup production.
The gathered sap must then be boiled carefully for many hours to reduce it to syrup. Forty litres of sap will make only one litre of syrup. During the long evaporation stage the Bouviers keep us amused with their games and antics. Being ever watchful for good sticks, they help feed the hungry stoves used to heat the pans of syrup. The best part of making Maple Syrup is in the tasting. Our Bouviers know that with fresh syrup comes Mom’s Blueberry Buckwheat Pancakes, and that there are always enough for everyone. Then there are the Bouv Biscuits, with just a taste of syrup,- crunchy and yummy, and very well earned.
